Good Morning Casserole









6 eggs
1½ cups milk
4 slices bacon-style turkey, diced, cooked
½ cup low-fat Cheddar cheese, grated, divided
⅓ cup white mushrooms, sliced
½ cup frozen hash brown potatoes, thawed
4 slices bread, crusts trimmed, cut into quarters
¼ tsp salt
cooking spray


  • Preheat oven to 350°F (180°C).
  • Spray a 9 x 9 x 2 inch (23 x 23 x 5 cm) baking pan with cooking spray.
  • Arrange bread slices in pan, overlapping slightly; set aside.
  • Beat together eggs, milk, bacon and ¼ cup (50 mL) cheese in a large bowl.
  • Add mushrooms and salt. Pour mixture over bread slices.
  • Sprinkle potatoes and remaining cheese over egg mixture.
  • Bake until lightly browned and knife inserted near centre comes out clean, about 35 minutes.
  • Serve immediately.
