Rabbit River Tuscan Boneless
Chicken Thighs
Ingredients
½ cup fresh orange juice
¼ cup fresh lime juice
¼ cup fresh lemon juice
2 tbsp olive oil
1-2 tbsp fresh oregano, finely chopped
2 cloves garlic, finely chopped
1 tsp sea salt
½ tsp freshly ground pepper
6-8 Organic Boneless Chicken Thighs
Method
- Whisk all juices, olive oil, oregano, garlic, salt and pepper together.
- Place in a Ziploc bag along with Organic Boneless Chicken Thighs.
- Seal bag and place in refrigerator for at least 2 hours turning occasionally.
- Can be done day ahead as well.
- Preheat Barbeque.
- Pat chicken pieces dry and place on rack at medium heat.
- Season with more salt and pepper as preferred and cook until internal temperature reads 160°.
- Serve with grilled fresh vegetables and pasta.
